Apple Upside-Down Muffins


  • 1 1/2 c. all-purpose flour
  • 2 t. baking powder
  • 1/2 c. sugar
  • 1/2 t. salt
  • 1/2 t. ground cinnamon
  • 1/4 t. nutmeg
  • 1/2 stick butter
  • 1 c. peeled, shredded apple
  • 1/2 c. buttermilk
  • 1 egg, lightly beaten
  • 1/3 c. brown sugar
  • 3 T. butter
  • 1/2 c. chopped pecans

Combine flour, baking powder, sugar, salt, cinnamon and nutmeg. With pastry cutter, cut in butter. Combine buttermilk and egg and add to flour mixture along with apple, stirring just to moisten.

For topping: Over low heat, melt butter in a small saucepan and stir in sugar. Spoon brown sugar mixture into greased muffin cups (about 1 t. per cup) Add chopped pecans to each muffin cup.

Spoon batter into cups and bake in a preheated 375° oven for about 20 minutes. Turn out and serve with nut side up. Makes 12 muffins.
